本发明公开了一种含有D‑阿洛酮糖的发酵果蔬汁的制备方法,所述制备方法包括(A)D‑阿洛酮糖的酶法转化,(B)果蔬汁的微生物发酵,(C)果蔬汁发酵后的口感调试,通过用D‑阿洛酮糖部分代替高热量糖分作为发酵过程和发酵完成后的糖度调节剂,从外源上降低果蔬汁的热量,此外通过分步酶解反应,将果蔬汁中的葡萄糖、蔗糖、果糖等高卡路里的糖分转换为低卡路里的D‑阿洛酮糖,再通过一种沙漏型酶解反应装置,将初步酶解后的果蔬汁反复流经内部填充有XIase‑DTEasease载体填料球的多孔通柱,可对酶解后的果蔬汁进行连续酶解反应。总之,利用本发明制备的发酵果蔬汁,具有口感良好,热量低,安全健康,且具有生产工艺简单,设备投资负担小等优点。
